When you have only two pennies left in the world, buy a loaf of bread with one, and a lily with the other.

Single-Rise Bread Baking Classes
by

Friday evenings 6:30pm - 9:30pm
In these classes you will learn a very basic, one-rise recipe which you will use as your foundation.  From there you may mix and match  ingredients depending on what you may have available.  That is the beauty of making bread.  Much like soup, it revels in bounty and abundance, suggesting you loosen up your adherence to strict measures, and acknowledge and play with the gifts of Nature that may come your way.

Given, I come from a family of Italian food-hoarders, and may come home to "gifts of excess" left by my well-meaning Aunt or Mother.  It may be 3 jars of peanut butter found on sale, a pound of cheese ends from the deli, or a bushel of tomatoes from the ends of a community garden in Laconia.  Your friend may bring you a jar of pear jam, you may have a pumpkin left over from Halloween, or maybe you have a jar of Ginger Chutney on your fridge door that you just will never use.......leftover rice, or a baked potato, or a half-jar of olives.  These odd ingredients form the centerpiece of your flavor-of-the-week.

 So that is how we will start.  Here is what you need to bring:
       1.  A large bowl, preferably ceramic;
       2.  A cloth to cover your bowl;
       3.  A stiff wooden long-handled spoon.
I will supply the flour which must be high-gluten, the salt, sugar or molasses, and some basic grains such as Corn for Anadama Bread, Oats and Wheat.  If you would like to bring any left over ingredients feel free.
We will learn the recipe and mix the dough by hand (6:30 - 7:30); accelerate the rise and socialize (7:30 - 8:30); free-form the bread on cookie sheets (8:30 - 8:45) and bake (8:45 - 9:15).

The fee is $30.00.  Kindly RSVP as soon as possible.  Space is limited to 6 students; please register early.
